This simple guideline will show you how to make longan fruit sweet soup, or che sen long nhan, in an easy way. Sweet soup is very popular dessert in Vietnam.
50 g fresh lotus seeds
50 g big longans
250 g sugar
7 bowls of water
1. Peed longans; remove the pit, leaving pulp as intact as possible. Soak lotus seeds; remove the shell, outer membrane and the bitter-tasting germ. Boil lotus seeds in water until soft; let cool; put each lotus seed inside each pulp.
2. Boil and filter sugar; put ten longans (with lotus seeds as the pit) in a bowl; pour in sugar syrup; serve with ice.
Alternative: Mix 100 g kudzu powder with a bowl of water and slowly pour into the pot of sugar syrup; cook until powder becomes translucent; ladle into bowls and add longans with lotus seeds as the pit. Lotus seed liquor can also be mixed with sugar to make syrup.
