How To Make Xoi Gac

This simple guideline will show you how to make xoi gac, or steamed momordica glutinous rice mixed with green bean, in an easy way.

Ingredients

300 g glutinous rice

80 g green bean

150 g ripe momordica

15 g sugar

30 g liquid lard

5 ml rice wine

Salt

Preparation

1. Soak split green beans in cold water for 6 hours; remove the husk; discard crunchy green beans.

2. Soak washed glutinous rice in water for 8 hours; the wash under running cold water and strain off; spinkle rice with salt and toss lightly; add green beans and blend well.

3. Knead rice wine with the aril and seeds of momordica; blend with mixture of rice and green beans; then steam.

4. When glutinous rice is nearly cooked, sprinkle with liquid lard, add sugar and mix well. When glutinous rice is cooked, remove the seeds of momordia.
