This simple guideline below will show you how to make grilled beef wrapped in lolot leaves in an easy way.
- 250g beef
- 100g lean pork
- 150g pork liver
- 50g dried shallot
- 10g garlic
To taste: Sugar, vinegar, fish sauce, seasoning (which consists largely of salt and MSG), pepper, lolot leave and liquid lard.
- Mince beef, pork and pork liver mixed with shallot and garlic; mix with seasoning, sugar and liquid lard; set to marinate.
- Remove the lolot leaf stem, wash and drain; place the mixture of meat on the leaf, then wrap up (repeat with the remaining leaves until all the beef is used); place the wrapped meat on a grid and grill over a charcoal fire until golden; transfer to plate.
- Heat the fat and fry the shallot until fragrant; sprinkle the plate of grilled meat with fried shallot, mix the fish sauce with vinegar, sugar, garlic and chili to make dipping sauce.
